Potato waffles

Ingredients

  • potatoes - 1-2 medium size per each person
  • olive oil
  • fenugreek (optional, remove if you don’t like it)
  • garlic - 2-3 cloves
  • freshly ground black pepper, salt, thyme

Cooking method

Boil the potatoes with their skins on in salted water until cooked through.

Mix olive oil, fenugreek, thyme, salt, and pepper.

If you have an electric waffle maker or a sandwich press with a lid, lightly grease it with oil. Place a potato inside, press it down to flatten it, and cook until it takes the shape of a waffle and develops a golden crust. Remove and place on a plate, then brush with the spiced oil.

If you don’t have a waffle maker, smash the potatoes with the bottom of a glass to form patties. Place them on a baking tray lined with parchment paper, brush them with the spiced oil, and bake or grill them for 15–20 minutes until they develop a golden crust.

Serve as a side dish to chicken with pomegranate and honey sauce.
