Crush the OREO biscuits in a blender, spread them over the bottom of the baking tin, and press down firmly, including up the sides of the tin.
Mix the cheese, sugar, sour cream, pudding, butter and egg yolks thoroughly (preferably using a kitchen robot), then whisk stiff egg white with egg whites and gently mix with the rest of the cheesecake.
Put the crumbled Oreo biscuits on the bottom of the baking mold and pour out the cheesecake mass. Put in the oven preheated to 160 degrees C and bake for about 45 minutes.
While baking, check that it is not too baked. The surface of the cheesecake should be baked in a golden brown colour. After baking, switch off the oven and leave the cheesecake inside to cool.
After removing the surface of the cheesecake, spread it with dulce de leche (optional) and sprinkle with nuts or almond flakes.
