Savoury fritters

Ingredients

  • cottage cheese (9% fat) — 400 g
  • bryndza (or other salty white cheese) — 200 g
  • plain flour (adjust based on cheese moisture) — 6–8 tbsp
  • rice flour (for coating) — 1–2 tbsp
  • egg — 1 pc
  • garlic clove — 1 pc
  • sugar (level, not heaped) — 1 tbsp
  • fresh herbs of your choice — 2 generous handfuls
  • capers (optional, but if using, skip the added salt or it will be too salty) — 2 tbsp
  • black pepper, salt
  • sour cream (for serving)
  • vegetable oil for frying

Cooking method

Thoroughly mix the cottage cheese (use the driest you can find!), bryndza, plain flour, egg, sugar, chopped herbs (and capers, if using), black pepper, and grated garlic in a bowl. Taste the mixture, if it’s not salty enough, add a little salt, but go carefully, as the saltiness depends mostly on the bryndza.

Wet your hands and shape the mixture into fritters. Coat them well in rice flour.

Heat a heavy-bottomed frying pan, pour in enough vegetable oil to make a 1 mm layer, and fry the fritters on low heat for about 5 minutes on each side. Transfer to a paper towel and let them rest and firm up slightly.

Serve with smoked salmon, sour cream, and a green salad.
