Pound the breast, add salt and pepper, then quickly fry in olive oil until lightly golden brown, but do not dry it out. Chop finely.
Take celery stalks and apples at a 1:1 ratio. Cut the celery and apple into strips.
Finely chop a bunch of green coriander, add a few fresh mint leaves, crumble or grate the cheese, and add salt.
You can add nuts, dried berries, or halved grapes.
Dress with low-fat sour cream or regular cream, slightly whipped with salt and lemon juice.
