Preheat the oven to 200°C.
Mix the maple syrup, olive oil, water and eggs in a bowl and whisk until smooth.
Add the grated apples (do not squeeze out the juice!), almond flour, desiccated coconut, matzo meal and starch, and mix with a spatula until smooth and homogeneous.
Grease a baking dish (preferably ceramic) with vegetable oil, transfer the batter and smooth the surface with a spatula, sprinkle flaked almonds on top.
Bake at 200°C for about 30 minutes (look for a golden crust on top).
Let the cake cool slightly and, if desired, dust with icing sugar before serving.
