Peel the turnip, cut it into chunks, and put it in a food processor (a blender is also very suitable), but if you’re okay with using a grater, you can grate it too.
Chop (or put in the processor) the onion. Mix the turnip, onion, and two eggs in a bowl (if the turnip is large or the eggs are small, add one more), mix well. Salt generously, add the spices. Add flour one tablespoon at a time, checking the consistency, you should get a batter that holds together but isn’t too thick, this isn’t a cake. (Sometimes turnip can be a bit dry, then add a couple tablespoons of water.)
Heat butter in a pan and spoon in your turnip latkes.
Fry 2–3 minutes on each side.
The taste is something between sweet potato and carrot latkes, slightly sweet, but very cool.
Bon appétit!
