Cheese biscuits

Ingredients

  • cheese — 100 g
  • cottage cheese — 200 g
  • butter — 70 g
  • 1 egg yolk
  • flour — 5 tbsp
  • salt, herbs, spices

Cooking method

Grate the cheese. If you have cottage cheese, brined cheese, or feta, mash and mix it with the grated cheese. The proportions can vary, feel free to experiment, it will be tasty either way, just with different flavours. You can even use only cheese without mixing.

Now take the butter, soften it, and mix it into the cheese mixture. The amount of butter should be about half the amount of the cheese mixture. Add a little salt. Mix the flour with baking powder. The flour should not be more than the total of the cheese and butter, less is fine too.

You can add an egg, preferably just the yolk. Mix everything thoroughly, roll into a ball, wrap in plastic or a bag, and let the dough rest for half an hour.

Lightly flour a surface or board, roll out the dough not too thin, not less than half a centimeter. Cut into your favourite shapes: circles, triangles. Sprinkle with anything you like: herbs, caraway seeds, sesame.

Line a baking tray with parchment paper, and preheat the oven to 200°C.
